ROASTED RASPBERRY CHIPOTLE SAUCE QUICK TIPS _________________________________________________________

Pour Raspberry Chipotle Sauce over softened cream cheese or warmed Brie for a quick and delicious appetizer. Serve with assorted crackers.

Spread warmed flour tortillas with 1 tbsp cream cheese, drizzle with Raspberry Chipotle Sauce, roll up and enjoy a quick, easy snack.

Heat tamales in the oven. Put on serving platter, and spoon warmed Raspberry Chipotle Sauce over the tamales. Garnish with fresh cilantro.

Pour warmed Raspberry Chipotle Sauce over waffles, pancakes, or French toast. Extra quick using frozen breakfast items.

Place whole links of sausage on grill, cook until done. Slice sausage into ¼ to ½ inch rounds. Place sliced sausage on platter and cover with warmed Raspberry Chipotle Sauce.

CRISPY RASPBERRY DUCK ______________________________________________________

1 5 to 6 lb. duck* 1 orange, quartered; 1 bottle Bronco Bob’s Roasted Raspberry Chipotle Sauce

Preheat oven to 350 degrees F. Rinse duck inside and out. Dry cavity and place 1/4 cup Bronco Bob’s Roasted Raspberry Chipotle Sauce and orange quarters in cavity. Place on rack in roasting pan, breast side up in preheated oven. Roast for approximately 2 ½ to 3 hours, basting every 30 minutes with Bronco Bob’s Roasted Raspberry Chipotle Sauce. Let rest 10 minutes and carve. Garnish with a few fresh raspberries and pass extra warmed sauce when serving. Serves 4 to 6.

RASPBERRY CHIPOTLE BEAN DIP ________________________________________________________

2 10.5 oz. cans pinto beans, black beans, or refried beans, drained; 1 large red onion, diced; 2 8 oz. packages softened cream cheese or shredded cheddar cheese; 1 Bottle Bronco Bob’s Roasted Raspberry Chipotle Sauce

Drain beans thoroughly and pour into a flat microwave safe dish. Sprinkle onions on beans. Gently spread cream cheese or cheddar cheese over onions. Pour and spread Bronco Bob’s Roasted Raspberry Chipotle Sauce over cheese layer. Microwave on high for 3 to 5 minutes. Serve with tortilla or corn chips.

4 dozen prepared meatballs (use frozen or prepare your own favorite recipe) 1 bottle Bronco Bob’s Roasted Raspberry Chipotle Sauce

If using frozen prepared meatballs, heat as directed. Place in saucepan and cover with Bronco Bob’s Roasted Raspberry Chipotle Sauce. Simmer over low heat for 15 minutes, stirring once or twice. Keep hot and serve as a tasty appetizer. _______________________________________________________

QUICK AND TASTY RASPBERRY CHIPOTLE FIELD SALAD _______________________________________________________

1 bag (6 oz. - 12 oz.) Salad Ready Spring Field Greens; 1 4 oz. package crumbled blue cheese or feta cheese; roasted pine nuts; ½ cup Bronco Bob’s Roasted Raspberry Chipotle Sauce; ½ cup rice wine vinegar (available in the Asian or wine vinegar section); 2 tbsp. olive oil; fresh raspberries (optional)

Fill salad plates with spring field greens. Sprinkle 2 tablespoons crumbled cheese and 1 tablespoon pine nuts over greens. Combine Bronco Bob’s Roasted Raspberry Chipotle Sauce, rice wine vinegar and olive oil in a screw top container. Shake well. Drizzle over salads, and top with a few fresh raspberries, if desired. SALMON WITH ROASTED RASPBERRY CHIPOTLE SAUCE _______________________________________________________

Use either salmon steaks or salmon filets. Marinate salmon in Bronco Bob’s Roasted Raspberry Chipotle Sauce for 1 hour. Sear both sides of salmon on medium hot grill to seal in moisture. During last 5 minutes of cooking, baste both sides with Bronco Bob’s Roasted Raspberry Chipotle Sauce. This final basting will ensure a delicious glaze on the salmon.

Preheat oven to 375 degrees F. Place either frozen or fresh wing sections; in foil-lined flat baking dish. Smother with Bronco Bob’s Tangy Apricot Chipotle Sauce, turning to coat with sauce. 1 6 - 8 oz. package corn muffin mix; ½ cup Bronco Bob’s Tangy Apricot Chipotle Sauce

Prepare using package directions for cornbread (Johnny Cake). Before baking, drizzle ½ cup Bronco Bob’s Tangy Apricot Chipotle Sauce over top and marbleize through batter with knife. Bake as directed. Serve warm with lots of butter for a sweet hot accompaniment to any meal. ________________________________________________________

GRILLED SALMON WITH TANGY APRICOT SAUCE ________________________________________________________

4 1-inch thick salmon fillets or steaks; 1 bottle Bronco Bob’s Tangy Apricot Chipotle Sauce; 1 lime

Marinate salmon 12 - 24 hours in Bronco Bob’s Tangy Apricot Chipotle Sauce. Preheat gas grill (medium-high), if using charcoal, use when coals are evenly white. Using a grill basket, place fish on grill. Cover grill and cook for 5 minutes. Baste with marinade, turn, baste again, cover and cook for another 5 minutes. Remove from heat to serving plates and serve with a squeeze of fresh lime juice. Serves 4 ________________________________________________________

APRICOT CHIPOTLE GRILLED PORK CHOPS ________________________________________________________

3 lbs. 1-inch pork chops; 1 bottle Bronco Bob’s Tangy Apricot Chipotle Sauce

Marinate pork chops in Bronco Bob’s Tangy Apricot Chipotle Sauce for 1 hour or longer. Grill over medium low heat for 10 minutes, baste with sauce and turn over, baste again, and cook for an additional 8 - 10 minutes or until done. Serve with extra sauce, warmed for dippin’. Serves 4 to 6

ROASTED GAME HENS WITH CHERRY CHIPOTLE STUFFING ________________________________________________________

4 1 to 1 ½ lb. game hens; 1 16 oz. package herb stuffing mix 1 bottle Bronco Bob’s Wild Cherry Berry Chipotle Sauce; 1 stick butter or margarine, melted; 3/4 to 1 cup water

Preheat oven to 350 degrees F. Prepare stuffing mix by adding Bronco Bob’s Wild Cherry Berry Chipotle Sauce, melted butter, and water to the breadcrumbs. Add more water as needed for moister stuffing. Rinse Game Hens and salt cavity. Loosely spoon stuffing mix into cavity. Place on rack in roasting pan.

SMOKEY FIRED UP BEANS ________________________________________________________

3 16 oz. cans pinto beans*; 1 bottle Bronco Bob’s Smoked Bacon Chipotle Sauce; 4 slices bacon, cut in half; Preheat oven to 300 degrees F. Combine beans and Bronco Bob’s Smoked Bacon Chipotle Sauce. Grease a 2-½ quart baking dish and pour prepared beans into dish. Place bacon slices on top. Cover and bake for 2 ½ hours, remove cover for last hour to crisp bacon. Get ready for some HEAT! Serves 4 to 6;

*(canned pork and beans may be used in place of pinto beans for a “sweeter fire”).

ZESTY BEEF BRISKET ________________________________________________________

1 3 to 4 lb. beef brisket, trimmed; 1 bottle Bronco Bob’s Smoked Bacon Chipotle Sauce

Marinate brisket in Bronco Bob’s Smoked Bacon Chipotle Sauce for 24 to 48 hours. Remove brisket from marinade and reserve for later use. Preheat an outdoor grill. Sear brisket 6 - 8 minutes on each side on grill. You may also sear the meat in a large skillet or roasting pan over medium-high heat on the stove.

Preheat oven to 275 degrees F. Lay out overlapping sheets of heavy-duty aluminum foil on cookie sheet. Place brisket on foil, pour about ½ cup of the reserved marinade over the meat, and wrap securely. Reserve remaining marinade for later use.

Roast, undisturbed, in the center of the oven 4 to 5 hours. At the end of the cooking time, remove from oven and let stand 10 minutes. Pour off juices and combine with ½ cup of reserved marinade to make sauce. Boil for 12 to 15 minutes to reduce and thicken. Season with salt and pepper, and whisk in 2 tablespoons soft butter.

Slice brisket across the grain. Garnish a large plate with a combination of tender greens, arrange overlapping slices of brisket on plate and drizzle with sauce. Pass additional warm sauce! Serves 4 to 6 _______________________________________________________

SMOKED BACON CHIPOTLE RIBS _______________________________________________________

6 lbs. baby back ribs or pork spareribs; 1 bottle Bronco Bob’s Smoked Bacon Chipotle Sauce

Preheat oven to 350 degrees F. Cut ribs into serving size portions of 2 - 3 ribs. Brush both sides with Bronco Bob’s Smoked Bacon Chipotle Sauce and place on rack in roasting pan or broiler pan. Put ½ cup water in bottom of pan. Cover ribs with foil and bake 1 ½ hours or until fork tender, brushing with sauce once or twice during cooking. Serve with additional warmed sauce for dippin’. Serves 4 to 6.
